I was telling my friends that I made Taco Pasta last night and they all looked at me funny. I described what I had done and the cocked heads and furrowed brows all changed into looks of hunger so I thought I would share the recipe with you here.
It is super simple to make and the entire meal only cost me $8 so you just can't beat that. While it's just Pokey and I, we have plenty of leftovers but even with Hobbit home we would have gotten a full second meal out of it. Enjoy!
Taco Pasta Recipe
1 lb of ground beef (I use 97/3)
1 16 oz package of noodles (whatever floats your boat)
2 cups of Mexican blend shredded cheese
1 16 oz jar of salsa (heat and brand is up to you. I use Publix brand mild)
2 tbsp of tomato paste
Spices (season to taste) - cayenne, onion, garlic, salt, and pepper
Directions
1. Brown your ground beef with the spices and drain. Preheat oven to 350*F
2. Add jar of salsa, half a jar of water, and tomato paste. Mix well and let simmer on medium heat.
3. Cook noodles per package directions, leaving at al dente firmness, drain.
4. Mix beef and sauce mixture with the noodles and combine well so all noodles are covered.
5. Mix in one cup of cheese until melted and well blended.
6. Sprinkle additional cup of cheese on top of mixture and bake for 8 minutes or until perfectly melted.
As you can see, I drizzle a bit of ranch dressing across it because I love how the coolness of the ranch compliments the heat of the salsa. It is so delicious and I promise, you will love it too!

The crafting community is one of love. Selfless love. We reach out to help and don't even care what the challenge may be. We just know that someone is hurting and needs to be lifted up. I was most certainly lifted - with love and support from what others might call complete strangers. I would never call you that. You aren't strangers... you are my family that I just haven't been able to meet in person yet... and I am so blessed to have you. There were days where I turned to your messages for comfort and inspiration to make it through the day. There were days when the only smile came from your words. I can't even begin to describe what y'all have done for me these past 4 months.
Things are better now. It took a lot of hard work, a lot of love, and oh so many prayers but things are improving. Aspects of my life had to be broken down so they could be rebuilt - better and stronger. I learned a great many things about myself this past quarter and I hope to continue to learn as the year goes on. What transpired is not what I was envisioning for this year but in a way, I'm glad it happened because what has grown from it is blooming into something even more beautiful that what once was.
I know I sound cryptic and I know I usually share openly with you, my online family. This situation, this one is one that I will keep to myself, at least for now. It is still delicate and fragile. It needs to be protected as it heals and the roots take hold. I know you understand and I know you will respect that because you have already shown that me.
I just wanted to take a moment and let you know that I heard you and I saw you... and I appreciate you so very much.

It's the little things
That is how you know you are loved. Yes, grand gestures are great and amazing and magnificent and everything our younger selves think they should be because we watch movies and read books that constantly show us that is what love is supposed to be... but it's not. Each person has a specific love language and it is up to us to learn it, just as we have our own love language and they learn ours.
Love is found mostly in the quiet moments. The little blips in life that most don't notice until they are gone. Waking up to coffee on your bedside when you didn't even ask for it... even more, knowing exactly how you take your coffee. Folding the laundry or even helping with the folding without being asked. Picking up one of his time consuming chores because you know that he has had a bad week. Making a meal you can't stand simply because you know he loves it. Cleaning the bathroom because there isn't a cleaner on the universe that doesn't bother your asthma. Taking out the dog whose eyes are floating so you can finish a row and not lose your place in the lace pattern.
I could go on but you get the point. These little things, while they may seem common place and normal, are what showing love is about so don't take them for granted. Show honest appreciation for the little acts... because that gets noticed too. If you don't acknowledge those things, and I mean sincerely acknowledge them, the person doing them will feel as though they don't matter and they will stop.

Sapphires today
If I were an anniversary, that is what I should get... but I'm not an anniversary. It is, however, my birthday and I am 45 years old today. I don't feel 45 at all but that is what the math comes to when you take away my birth year from this year so that is what I am.
It has been a nice day so far. I should have cleaned up but I didn't. My folks came down and I showed off my present - a new 4K smart television. I played a bit of "Rogue One" for them because the picture is awesome and that movie is epic from a cinegraphic standpoint. Is cinegraphic even a word? Oh well, it is now. After that, we went downtown to have some lunch. A cute place with the best French fries. It's called "A Matter of Taste". The sweet tea is heavenly and the fries can't be beat, I swear. I have never gotten a bad meal there, ever. Once we finished, Mama and I went down to "Quilts on Plum Lane" to wander around and Daddy went up to his favorite antique shoppe. My downtown is 90% antique establishments. It is what we are known for, I think. Oh, but between lunch and shops, I hopped into Olga's and got an assorted dozen donuts! That bakery makes the best donuts, I swear.
I'm home now, waiting on Hobbit to pop in from school. Since it's my birthday, I get a free drink from Starbucks. I need to get a card for my Secret Santa at work and see if I can't find one or two more things for Pokey to open on Christmas morning. I'll have Hobbit with me so that should make things easier. He is just not an easy man to buy for because all he does is go to work and play Elder Scrolls. Limits the possibilities.
I think I'll play my recorder for a bit while the house is my own. Nice way to unwind before the second half of my birthday begins.

Because he deserves it

So, yesterday we went to the Nissan dealership because they had a promotion that sounded interesting. Now keep in mind, I am the negotiator in these things because I walk in and lay it all bare - this is what we're trading in, we aren't putting anything down, and I want the payments between here and here. He hates car shopping but he needs a new one so you will deal with me. He will drive it and decide if he likes it but otherwise, you will deal with me. What can you do for us? - and see what happens. I hate being jerked around and my husband thinks all sales people are out to stick it to you. This is the one place where my social anxiety doesn't seem to kick in because I have my husband with me and he always tells me little things like "you are so good at this" etc which gives me confidence... and my daddy taught me how to buy a car so I am not afraid to just get up and walk away.

Well, I made an appointment today and I'm taking him down there at 11. It won't be odd for us to go to the Toyota dealership because I told him that my breaks were squeaking and I wanted them looked at. I told him that I called on the way home and we had an appointment on Sunday at 11. He doesn't know that I can get him a new Toyota and the reason my car is going too is because if he wants something besides a Camry, Corolla, or RAV4 then I'll trade in my car too because since my car is a Toyota, I can get anything from the lot.
His only requirement is AC... mine is that he finally gets a new car and one that he likes, not a compromise, because he deserves it.

Sunday Snaps

We spent the afternoon decorating the house for Christmas. |
After church, Hobbit and I ran to the grocery store while Pokey dressed the turkey and put it in the oven. Once we put the groceries up, we had lunch at Panera and dropped Hobbit off at Girl Scouts. They were decorating Christmas trees for the people at a local nursing home. She said she really loved spending the afternoon with the elderly residents and has narrowed her 'career choices' down to three - Engineering, Law, and Geriatric Medicine. I love how her passions and mind works some times.
Once I picked her up from Girl Scouts, we went home and decorated our house. She seemed to get really disappointed when I made mention that I was going to do it while she was away but save the tree for when we were all together. She sniffed at the idea though didn't say anything but seeing her disappointment, I waited. That made her super excited when I told her the news. So we decorated our house. She has a tree in her room that stands 4' tall and we have our family tree that stands over 6' - it's tall enough to hit the ceiling and we can't put a topper on it.
The outside did not get done but I'm sure my husband will do it next weekend - because we bought brand new lights for the porch area that are old fashioned big colored lights so he's excited to put them up, he was just really worn out today. I'm not complaining though, as he has been ten days without any type of nicotine - ecigarette or regular - so if he's a little worn out, that's okay. Tomorrow is another day.

Thankfulness
So many blessings this week, it has been difficult to choose which I wanted to write so I figured I would just be me and write about them all.
This past week, Hobbit has been up with my folks. They drove up to Williamsburg and Jamestown, Virginia to make the same memories with her that they did with me so many years ago. I hope she had a wonderful time - judging by the photos I saw, she did. I know what you're thinking, why don't you call and ask her... well, because she's spending time with my folks and I don't want to infringe on their special time together. I will see her tomorrow and hear all about it.
This past Friday, I took the day off from work - I actually worked 4 ten hour days so I could be off on Friday - and Pokey and I spent the day at Disney's Hollywood Studios. We had a wonderful day enjoying some of our favorite attractions at our own pace. Taking Hobbit is always a treat but some days, we like to go at a little slower pace and this was one of those days. I have a ton of photos up on my Instagram account. Actually, if you start at the first one, I believe I documented our entire day at the park so you can stroll along with us - right down to knitting and reading in queue.
This week at work has been full of interesting things. I am finally down to just one job, working the normal hours I was initially told I would be working, and doing the job I was promoted to do. It has been fantastic! I have a feeling of normalcy back in my life. No more fretting over getting it all done, finding the hours, shuffling the priorities and reshuffling again. I have really enjoyed this week - and it was a short week considering I am done until Monday... another thing I'm thankful for, definitely.
Our little knitting group that my friend and I have been trying to get going looks like it's finally going to take off. We have tried different locations over the months and it appears as though this last one is the ticket. If you are in the area and have some free time on Saturday mornings, please come and join us! We're up to seven members now, Hobbit included.
We're fixing to head into a break month of all of my Ravelry tournament themed knitting groups - HPKCHC and Disney Adventures. It's been a crazy term/series but with work life settling down, this upcoming term/series should be fantastic. I've put in my request to be in a specific area of the Cup so we'll see if the blessings continue.
Speaking of more blessings, Pokey and I tried a new church this past Sunday and it was glorious. Very welcoming, not too big, powerful message, and we both agreed that we want to keep going. I truly believe we may have found our church home. Pokey wants to start their Men's Bible Study which meets before church so I'm guessing Hobbit and I can try out the Women's group that meets at the same time.
Sounds like Pokey is home with supper so I'm going to go. We've got to eat and get settled in for the night. I'm so proud of him - he's trying to quit smoking and hasn't had a cigarette or e-cigarette for the entire time that Hobbit has been away! Praise God for that for sure.
I hope y'all have a wonderful time with your loved ones tomorrow and I'll talk with you soon.

A week of quiet
I took Hobbit up to meet my folks on Wednesday afternoon. They took her to Williamsburg, VA and she's got a scavenger hunt type of homework assignment since she is missing two days of school. So far, she's been having fun and I'm happy she is able to have these special memories with her grandparents. I lost mine when I was her age so I don't have those kinds of memories - though my parents more than made up for awesome memories for us.
Yesterday, Pokey and I made memories of our own. We went to Disney's Hollywood Studios and spent the whole day wandering around, enjoy attractions, and viewing the final season of The Osborne Family Spectacle of Dancing Lights. If you follow me on Instagram,, then you were with me the entire day but just in case you don't, here are a few highlights.
It was great to take a day and just enjoy being together. We rarely get such a treat and since we took a three day weekend together, we're continuing our fun - though today has been stormy so we're just relaxing at home. We slept in and honestly have yet to get out of our pjs, which is something we've not done in forever.
Tomorrow we can do chores, today, we recharge.

We followed that up with the Muppet Vision 3D movie and on our way out, I saw something I had never seen before - this! |

Topping Off Our Tanks

We all needed a Disney Day so yesterday, we headed out to the Magic Kingdom to top off our tank with some pixie dust! |
Nothing makes the day better moreso than a bit of pixie dust - and goodness knows, I have been needing a pixie dust refill! We hadn't been since our anniversary so that meant 3 months without a visits. Sure, we generally skip the summer months because of too many tourists but it was too much this time around so we took the day and had some fun.
I hope that you were able to refill your tanks with whatever helps you run - sleep, crafting, sunshine, family, or friends. I can face anything as long as I have had a nice bit relaxation before the work week comes rushing in... and if there is a bit of Disney magic involved, I can handle anything!

What a day it's been
I went to bed having an allergic reaction last night, thinking when I woke up it would have passed. Nope, it didn't pass at all - it morphed into an episode that lasted most of the day. I was worn out by noon and ended up sleeping in my chair until 4:30ish. Thankfully, I woke up feeling a lot better. Still not fabulous or 100% but way better than when I woke up earlier this morning.
Then, I get a call from Pokey who was late coming home. The reason for it was because he got into a car accident. He is fine, thank God. He contacted our insurance and since it was minor damage to either car, they just exchanged information and moved on with life. His little car has some damage on the front left bumper area but hopefully we will be able to get it fixed. I know the car insurance will pay for a rental car while they work on the repair so he won't be without a car... and neither will I.
My friend, KP, had come over after work so we could both learn how to sew box bags. We had cut out the fabric and just beginning to sew them when her husband texted her. He wasn't feeling well and wanted her home. I know that feeling - can't do anything but wait it out, which is frustrating, and wanting someone to just make it better. Naturally, she went home to care for him so our sewing date was put on hold.
I did finish my bag though. I am rather proud of it, though I learned a few things along the way. The first being that I need a handle. I like mine that have handles so this one needs that as well. The second is that I need zipper tabs. They truly are important.
So that's been my day. Not the best one on record but at least it had a shiny spot to share.

Happy Anniversary to us!
Pokey and I took the day to go play around Disney's Animal Kingdom, just the two of us. We had a blast riding the things we know Hobbit wouldn't like because they're too much of a thrill ride for her. Afterwards, we went and had a late lunch/early supper at Splitsville Luxury Lanes at Downtown Disney West Side. It was fabulous! Here are some photos of our anniversary day out...
The bottom opened up while we were having supper but thankfully, the new parking structure kept us dry as we headed to the car to go home. Granted, we didn't get wet on our adventure but the drive home was horribly wet and full of lightening. Pokey slept and I drove, which seems to be the norm on the way home from the parks. I'm okay with it though because I'm a horrible passenger, just ask him.
We were home by six o'clock, hosed off the park, and spent the rest of the night enjoying the quiet. I watched some episodes of Friends while I knit a row or two on my Marshmallow Shrug and he played his video game on the computer. It was a wonderful end to our fabulous day.
Today, we're headed up to my folks' to pick up Hobbit and celebrate Father's Day with Pokey and Daddy. It will be wonderful too. Mama is making BBQ beef ribs for supper! She made a special note to get beef instead of pork just for me so I will be sure to show my appreciation for her remembering my allergies. I hope y'all have a wonderful day too and be sure to give your daddy or father figure a call to let them know they are loved.

He's so sweet
My husband was at work the other day and during the course of the conversation, the young lady he was speaking to had made mention of her crocheting. My dear husband got all excited and told her that I too am a crafter. She shared photos of her work and he shared my blog with her.
When he was telling me about this last night, I was just smiling from ear to ear. I know that many of my talented friends have spouses who don't truly understand what it is that we do. They know it makes them happy and they support that aspect of it but they don't understand why playing with sticks and strings delights us. I can't say that my sweet Pokey truly understands it all either but the fact that he is so supportive - he truly is my biggest cheerleader - and appreciative of my work, it just melts my heart.

When he was telling me about this last night, I was just smiling from ear to ear. I know that many of my talented friends have spouses who don't truly understand what it is that we do. They know it makes them happy and they support that aspect of it but they don't understand why playing with sticks and strings delights us. I can't say that my sweet Pokey truly understands it all either but the fact that he is so supportive - he truly is my biggest cheerleader - and appreciative of my work, it just melts my heart.

Things brighten up a bit...
My goodness, what a week it's been! Hobbit has been horribly ill though she finally was able to keep all her meals down yesterday and no fever so she hopped on the bus today... granted, I have to pick her up for a dental appointment at 2 so she'll miss some things at the end of the day, namely PE so I'm not that concerned, but she's getting back to her normal routine which is always a great sign after a long illness.
Yesterday evening, after all the doctor appointments, I got a new (to me) car! I told Pokey on Friday when we had all the horrible stuff happen - Hobbit sick at school, I couldn't reach him, then I had to call a cab to go get her - that I was getting a car this weekend. I had been crunching our budget numbers and was able to work out exactly what we could do and still live life like normal. I figured if they could meet my numbers, great, and if not then I would simply walk away because I've been without a car for several years now and a few more months wouldn't kill me.
So we went to the local Toyota dealership where Pokey had gotten his car a few years ago and I just lay it all out there - what I had to put down and what I wanted my payments to be. I didn't feel fabulous and I am never in the mood to haggle so I figured we could get things done faster if I simply state it at the get-go to move things along. The VIP Manager - the name of a salesman who deals with return customers - pulled up two cars for me to test drive and decide on since I researched all of them online prior to going down.
Long story short, the guy came back wanting me to put down $500 more than what I said I wanted to and that my payments were going to be $68 more than I want I said I wanted them to be. So I thanked him for his time and started to walk out. Pokey knows that I don't like to be toyed around with so he smiled at the guy and said "you heard the boss, thank you for your time". I have honestly never seen someone scramble so fast in all my life!! He told me to just wait, please sit, he's got other banks he's waiting on for the financing. I stood and waited... and amazingly enough, I got better financing - with my down payment as it stood and my payments came in at $0.32 below what I told him I wanted to pay - with a better company!!
To be completely honest, my daddy was the one who told me that if they can't do what you want, just get up and walk away... wowzers, it worked. I remember watching him make deals when I was younger and I always thought he had some kind of super power. He was never rude, he simply stated the facts and if they could work together, that was awesome, but if they couldn't come to an agreement then he stood, smiled, shook the man's hand, and thanked him for his time and efforts. I simply did what my daddy has always done. I do think it's funny that Pokey always lets me negotiate things because I do our finances and know where or if there is any wiggle room so he just smiles and tells people that he married up... lol.
So here is my new (to me) car... it's a 2011 Toyota Corolla with 38k miles on it...
It's my first 'grown up' car so it feels a little weird. I usually get sporty things - compact SUVs, step-side pickups, three door coupes, and my Bug. This is my first 'adult' looking car but I guess at 42 it was about time. I do like it and I'm pretty sure that Hobbit will name it Baymax. She was super excited and to celebrate, Pokey took us out to supper at Cracker Barrel - but I got to drive. Granted, neither Hobbit nor I ate much but having breakfast for supper at one of our favorite places is always a nice treat.
Here's the inside of Baymax... He's (yes, cars have genders in our family) super comfy, has a huge trunk, and all the neat bells and whistles are on the actual key. I thought the coolest key I ever had belonged to my Bug - it flipped out of a case when I pushed a button - but this one beats that. No flipping, it's right there. I have to be careful I don't pop the trunk or something when I turn it on.. yes, that has crossed my mind more than once.
I must admit, I like having the sense of freedom again. I can go to the yarn store, grocer, my folks' house, shoot anywhere really. It's nice to be independent, in that respect, again. My husband is amazing for buying me the car... and yes, even though I crunched the numbers, worked the budget, negotiated the deal, and wrote the down payment check, he still bought it for me because he brings home most of the money. We are a true partnership and if he had said that he wanted me to wait until we had a bigger cushion so he felt better then that is what we would have done... though I know better than to bring him anything until I know we can handle it because his knee-jerk response to me has always been "if you want it, then we'll get it" - I learned early in our marriage to be careful what I randomly say I want because it will show up somehow. He is such a good man, always working to make me happy regardless of what it is and I love him for that - and it works both ways too.
So that is my happy news this week. I hope I can finally go back to work tomorrow - I've been having a horrible episode this week but I went to the doctor yesterday and they drew blood and ran tests. Hope to have some final answers by Spring Break so this nonsense will be over too. Even though I hated the tests, it's nice to know that things are going to come to a manageable end soon.
I hope y'all have been having a fabulous week. If we keep our face to the sun, things will always brighten up!

Such a good day
Today has been such a good day. You know the kind where it starts off with a small bit of goodness and then it just snowballs into awesomeness? It was one of those kinds of days.
It started when I learned about a particular event that can only be described as... well.. Karma. There was a little poster or online meme that said something about how if you live a good life, and do good things, then God will allow you to watch when Karma comes around to those who deserve it. Well, today I got to watch and I must say, I was so pleased. For months, I have been dreading going to work because the environment was, simply put, toxic. To learn that something was actually done just had me praising His name and thanking Him for his work... and today was a great day at work... something that hasn't happened since August!
The next bit of awesomeness in my day was finding an unused gift card for iTunes. It was enough for me to be able to get the new Phillip Phillips' album, which has been playing most of the day - and it is magnificent! I told my husband when he auditioned for American Idol that he would be the winner. I just knew... granted, I've got a good tracker record picking the winners from auditions too but he was different. He was electric, captivating, and his voice was cosmic. He has simply gotten better with time too. Amazing artist and I highly recommend you pick up this album if you can.
The other fabulous fun of the day - I won a project bag from my Quidditch square this past match over in the HPKCHC on Ravelry!! Oh yeah, so super cool and I can't wait to see what comes. I love project bags and I don't have near enough - not true project bags. I have some cute totes that I'll use but I really wish I had more actual project bags - box bags are my favorite. I may need to learn how to make them. That would be a great Mommy Day. I'll have to see if we can't do that one day.
The final bit of stupendousness for my day... Pokey bought me a cork board for my office! Yep, I made an offhanded comment that I really wanted one so I could get all the ugly stickies off my monitor because it just looked cluttered to me and he knows I don't do well with clutter. Now my office looks perfect and I'm in hog heaven. The last bit that I could use is a clock to hang on the wall for Hobbit to use to know when to go outside for the bus. I'll find one though... something fun... maybe I'll make one. Crochet a cute mandala and then get the clock kits to make it work. Yeah, I think that'll be my plan. I could use buttons or crochet cute flowers for the numbers.
My day has been so fully blessed - even my Knit Picks order came in faster than it said so I've got my "AUSTENtatious Crochet" book to read and figure out what I'm going to make first. I hope y'all had an equally blessed day. It's amazing the recharging effect it can have on a person - body and soul.

All my blessings

Yesterday was simply amazing. I found all of my blessings in life under one roof. I have amazing parents, a wonderful brother who married a sweet woman, an awesome husband, and fabulous kids. The time we are able to all get together is precious. I enjoyed yesterday so much and I hope that we won't have to let six and a half years pass by again before we are able to get back together.
We truly are a silly lot. God, I love my family so much. Thank you for making them mine! |

Such fun
Okay, so I'm still dealing with Miranda Hart deciding to pull the plug on one of my most favorite shows. She is so hilarious and if you have a subscription to Hulu then you simply must watch all three seasons of "Miranda" - you'll thank me for it if you've not yet seen it.
This past weekend we went up to see Peanut at school. It was Parents Weekend and while there were many things that I would love to have changed about it all, getting to spend that time with her was wonderful. How do I know that it was a blast - I didn't take hardly any photographs!!
Spending time with my whole family together brings me such joy. I love having my entire heart in one spot instead of split across the state. The only thing that would have made it perfect would have been my parents being able to go too.
Next year, we're just going to hang at my folks' house instead. Too many tourists and not enough quiet family time... but I'll take any time I can get because I know pretty soon, what little time I have will be gone as well.
Hug your loved ones - call them and tell them you love them if they aren't close by - but never take your family for granted. The time comes all too quickly when they aren't so never wait for tomorrow what you can tell them today.
