Beef with Broccoli, Cauliflower and Rice

So when Pokey and I were first married, we didn't have a lot of money. I wanted to make dishes that were more lavish than they actually were - and this is one of our favorites. I entered this particular recipe in the Tastes of Home recipe contest. Not sure if it will win, but I wanted to share it with you so you can enjoy it as well.

Beef with Broccoli, Cauliflower and Rice

Ingredients

  • 1 cup uncooked long grain rice
  • 1 pound ground beef
  • 1 bag of frozen broccoli and cauliflower florets (thawed)
  • 1 can (10-3/4 ounces) condensed cream of broccoli soup undiluted
  • 1/2 cup milk
  • 1 teaspoon garlic salt
  • 2 teaspoons minced onions
  • Worcestershire sauce (optional to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup shredded Parmesan cheese

Directions

  • Cook rice according to package directions and set aside. Then, in a large skillet, brown beef with spices and Worcestershire sauce; drain. Combine soup and milk in separate bowl and set aside. Add beef, rice, vegetables, soup mixture and cheese; stir until combined. Placed mixture into to a greased 2-qt. baking dish.
  • Cover and bake at 350° for 30 minutes. Uncover; bake 10 minutes longer or until heated through. Yield: serves 4
